Moroccan Bissara Fava Bean Soup with olive oil and cumin

Ingredients

  • 1 cup dried split fava beans, rinsed
  • 3 cups water
  • 2 garlic cloves, sliced
  • 1 tbsp olive oil, plus more to finish
  • 1 tsp ground cumin, divided
  • 1/2 tsp sweet paprika
  • 1/4 tsp cayenne pepper
  • 1 tbsp lemon juice
  • 1/2 tsp kosher salt
  • 2 small pieces warm flatbread

Steps

  1. Cover the fava beans with water in a small saucepan; bring to a boil, reduce to a gentle simmer, and cook until very tender, 30 to 35 minutes.
  2. Stir in the garlic, olive oil, 3/4 teaspoon cumin, paprika, cayenne, and salt; simmer 3 minutes.
  3. Blend the soup with an immersion blender until smooth, adding a splash of water if it is too thick.
  4. Stir in lemon juice and taste, adding more salt or lemon if needed.
  5. Divide into two bowls and finish with olive oil, the remaining cumin, and warm flatbread.
