Moroccan Bissara Fava Bean Soup

Ingredients
- 1 cup dried split fava beans, rinsed
- 3 cups water
- 2 garlic cloves, sliced
- 1 tbsp olive oil, plus more to finish
- 1 tsp ground cumin, divided
- 1/2 tsp sweet paprika
- 1/4 tsp cayenne pepper
- 1 tbsp lemon juice
- 1/2 tsp kosher salt
- 2 small pieces warm flatbread
Steps
- Cover the fava beans with water in a small saucepan; bring to a boil, reduce to a gentle simmer, and cook until very tender, 30 to 35 minutes.
- Stir in the garlic, olive oil, 3/4 teaspoon cumin, paprika, cayenne, and salt; simmer 3 minutes.
- Blend the soup with an immersion blender until smooth, adding a splash of water if it is too thick.
- Stir in lemon juice and taste, adding more salt or lemon if needed.
- Divide into two bowls and finish with olive oil, the remaining cumin, and warm flatbread.
