Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced

- 1 cup eggplant, chopped
- 1 can crushed tomatoes
- 4 eggs
- 1 tablespoon lemon juice
- 1/4 cup mint, chopped
- Salt and black pepper, to taste
Steps
- Heat the olive oil in a skillet. Cook the onion, garlic, ground cinnamon, and eggplant until soft.
- Stir the crushed tomatoes into the vegetables and simmer the tomato sauce until thickened.
