Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground ginger
  • 1 cup snow peas, chopped
  • 1 can crushed tomatoes
  • 4 eggs
  • 1 tablespoon rice vinegar
  • 1/4 cup scallions, chopped
  • Salt and black pepper, to taste

Steps

  1. Heat the olive oil in a skillet. Cook the onion, garlic, ground ginger, and snow peas until soft.
  2. Stir the crushed tomatoes into the vegetables and simmer the tomato sauce until thickened.
  3. Make four wells in the tomato sauce and crack the eggs into the wells.
  4. Cover the skillet and cook until the eggs are set to your liking.
  5. Finish the eggs with rice vinegar, scallions, salt, and black pepper, then serve hot.
