Lebanese Sayadieh Fish Rice with almonds and lemon

Ingredients

  • 10 oz firm white fish fillets
  • 1 tbsp oil
  • 2 small onions, thinly sliced
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon
  • 1/2 cup basmati rice
  • 1 cup fish or vegetable broth
  • 2 tbsp sliced almonds
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley
  • 1/2 tsp kosher salt

Steps

  1. Cook onions in oil over medium-low heat until deeply brown and sweet; reserve one third for topping.
  2. Stir spices and rice into the remaining onions, then add broth and half the salt.
  3. Place fish over the rice, cover, and cook on low until rice is tender and fish reaches 145°F (63°C), about 15 minutes.
  4. Toast almonds in a dry skillet until golden.
  5. Finish fish and rice with lemon juice, parsley, reserved onion, and almonds.
