Lebanese Sayadieh Fish Rice
Caramelized onion rice, toasted almonds, and flaky fish bring classic Lebanese coastal flavors to dinner for two.

Ingredients
- 10 oz firm white fish fillets
- 1 tbsp oil
- 2 small onions, thinly sliced
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp ground cinnamon
- 1/2 cup basmati rice
- 1 cup fish or vegetable broth
- 2 tbsp sliced almonds
- 1 tbsp lemon juice
- 1 tbsp chopped parsley
- 1/2 tsp kosher salt
Steps
- Cook onions in oil over medium-low heat until deeply brown and sweet; reserve one third for topping.
- Stir spices and rice into the remaining onions, then add broth and half the salt.
- Place fish over the rice, cover, and cook on low until rice is tender and fish reaches 145°F (63°C), about 15 minutes.
- Toast almonds in a dry skillet until golden.
- Finish fish and rice with lemon juice, parsley, reserved onion, and almonds.
