Kittitian Goat Water Stew

Dark goat stew with potatoes, carrots and small dumplings

Ingredients

  • 12 oz goat stew meat, cut into bite-size pieces
  • 1 tbsp neutral oil
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • 1/2 tsp ground allspice
  • 1 tbsp tomato paste
  • 3 cups low-sodium beef broth
  • 1 small potato, cut into chunks
  • 1 small carrot, sliced
  • 1/2 cup all-purpose flour
  • 3 tbsp water
  • 1 tbsp chopped scallion
  • Kosher salt and black pepper

Steps

  1. Season goat with salt and pepper. Brown it in oil in a heavy pot, working in batches if needed.
  2. Add onion and garlic; cook until fragrant. Stir in thyme, allspice and tomato paste for 1 minute.
  3. Add broth, cover and simmer very gently until goat is tender and at least 145°F, about 75 minutes.
  4. Add potato and carrot. Mix flour with water and a pinch of salt, then drop pea-size bits of dough into the simmering stew.
  5. Cook uncovered until vegetables and dumplings are tender, about 15 minutes. Finish with scallion and adjust salt before serving.
