Kazakh Beef and Onion Noodles

Kazakh Beef and Onion Noodles, finished dish

Ingredients

  • 1 1/2 lb beef chuck
  • 6 cups low-sodium beef broth
  • 1 bay leaf
  • 1 tsp black peppercorns
  • 2 large onions, thinly sliced
  • 12 oz broad egg noodles
  • 1 tbsp butter
  • 1/3 cup chopped parsley
  • 2 scallions, sliced
  • Kosher salt and black pepper

Steps

  1. Place beef, broth, bay leaf, peppercorns and 1 teaspoon salt in a pot; simmer covered until tender, about 35 minutes.
  2. Transfer beef to a board, strain and reserve the broth, and slice beef across the grain.
  3. Simmer onions in 2 cups reserved broth until very soft, 8 minutes.
  4. Cook noodles in remaining broth until tender, then drain and toss with butter.
  5. Arrange noodles with beef and onions, spoon over a little hot broth and finish with parsley and scallions.
