Italian Tuna Puttanesca Spaghetti
A brisk tomato, olive and caper sauce turns pantry tuna and spaghetti into a sharp, satisfying dinner for two.

Ingredients
- 6 oz spaghetti
- 1 tbsp olive oil
- 2 garlic cloves, sliced
- 1/4 tsp red pepper flakes
- 1 cup crushed tomatoes
- 1 can tuna in olive oil, drained
- 1/4 cup pitted black olives
- 1 tbsp capers, rinsed
- 2 tbsp chopped parsley
- Salt and black pepper
Steps
- Cook spaghetti in salted water until al dente, reserving 1/2 cup cooking water.
- Warm oil in a skillet and cook garlic and red pepper flakes for 30 seconds.
- Add tomatoes, olives and capers; simmer until slightly thickened, about 8 minutes.
- Fold in tuna gently so it stays in large flakes.
- Toss in spaghetti with a splash of pasta water until coated.
- Season to taste and finish with parsley before serving.
