Italian Tuna Puttanesca Spaghetti

A brisk tomato, olive and caper sauce turns pantry tuna and spaghetti into a sharp, satisfying dinner for two.

Spaghetti with tuna, tomato sauce, olives and capers

Ingredients

  • 6 oz spaghetti
  • 1 tbsp olive oil
  • 2 garlic cloves, sliced
  • 1/4 tsp red pepper flakes
  • 1 cup crushed tomatoes
  • 1 can tuna in olive oil, drained
  • 1/4 cup pitted black olives
  • 1 tbsp capers, rinsed
  • 2 tbsp chopped parsley
  • Salt and black pepper

Steps

  1. Cook spaghetti in salted water until al dente, reserving 1/2 cup cooking water.
  2. Warm oil in a skillet and cook garlic and red pepper flakes for 30 seconds.
  3. Add tomatoes, olives and capers; simmer until slightly thickened, about 8 minutes.
  4. Fold in tuna gently so it stays in large flakes.
  5. Toss in spaghetti with a splash of pasta water until coated.
  6. Season to taste and finish with parsley before serving.
