Indonesian Mie Goreng with Shrimp, finished dish

Ingredients

  • 6 ounces egg noodles
  • 6 ounces shrimp, peeled
  • 1 tablespoon neutral oil
  • 1 garlic clove, minced
  • 1 small shallot, sliced
  • 1 carrot, cut into matchsticks
  • 1 cup shredded cabbage
  • 1 large egg
  • 1 tablespoon sweet soy sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon sambal
  • 2 scallions, sliced
  • fried shallots, to finish

Steps

  1. Cook noodles until just tender, drain, and rinse briefly with warm water.
  2. Heat half the oil in a skillet. Cook shrimp for 2 to 3 minutes until opaque, then transfer to a plate.
  3. Add remaining oil, garlic, shallot, carrot, and cabbage. Stir-fry for 3 minutes until softened.
  4. Push vegetables aside and scramble the egg until fully set. Add noodles, sweet soy, soy sauce, sambal, and shrimp; toss until hot.
  5. Divide between two plates and finish with scallions and fried shallots.
