Hong Kong Baked Pork Chop Rice

Ingredients
- 2 boneless pork chops, about 10 ounces total
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon flour
- 1 tablespoon neutral oil
- 1/2 onion, sliced
- 1/2 bell pepper, sliced
- 1 cup tomato passata
- 1 teaspoon sugar
- 1 teaspoon soy sauce
- 2 cups cooked rice
- 1/2 cup frozen peas
- 3/4 cup shredded mozzarella
Steps
- Heat the oven to 425°F. Season pork with salt and pepper, dust with flour, and brown in oil for 2 minutes per side.
- Transfer pork to a board. In the same pan, cook onion and pepper for 3 minutes, then add passata, sugar, and soy sauce; simmer for 4 minutes.
- Stir peas into the rice and spread it in a small baking dish. Slice the pork and arrange it over the rice.
- Spoon tomato sauce over the pork and scatter with mozzarella.
- Bake for 12 to 15 minutes until the cheese bubbles and pork reaches 145°F. Rest 3 minutes before serving.
