Honey Sriracha Salmon with Garlic Lime Broccoli, finished dish

Ingredients

  • 2 salmon fillets, about 5 oz each
  • 2 tbsp honey
  • 1 tbsp Sriracha
  • 1 tbsp soy sauce
  • 1 tsp freshly grated ginger
  • 1 tsp toasted sesame oil
  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 lime, juiced, plus wedges to serve
  • 2 tbsp chopped cilantro or scallions
  • Salt and black pepper

Steps

  1. Heat the oven to 400F (200C) and line a sheet pan with parchment. The honey glaze welds itself to bare metal, so do not skip the paper.
  2. Whisk the honey, Sriracha, soy sauce, ginger, and sesame oil into a glaze.
  3. Pat the salmon dry, season it lightly, and brush half the glaze over the tops.
  4. Toss the broccoli with the olive oil, garlic, half the lime juice, salt, and pepper and spread it on a second sheet pan in a single layer with space between the florets.
  5. Roast the broccoli for 12 to 15 minutes, until tender with charred edges, and the salmon for 10 to 12 minutes, brushing with the remaining glaze halfway through.
  6. Pull the salmon when the thickest part reads 125F (52C) for medium or 145F (63C) for fully cooked. It carries over several degrees off the heat.
  7. If you want more colour on the glaze, run the salmon under the broiler for 60 to 90 seconds at the end and watch it constantly.
  8. Rest the salmon for 3 minutes, then serve with the broccoli, the remaining lime juice, the cilantro, and lime wedges.
