Ghanaian Waakye with Egg and Tomato Stew
Rice and black-eyed peas are served with egg, tomato stew, and sweet plantain in a bright two-person bowl.

Ingredients
- 1/2 cup long-grain rice
- 1 cup water
- 3/4 cup cooked black-eyed peas
- 1 tbsp oil
- 1 small onion, diced
- 1 cup crushed tomatoes
- 1 tsp tomato paste
- 1/2 tsp ground ginger
- 2 large eggs
- 1 ripe plantain, sliced
- 1/2 tsp kosher salt
- 1 cup chopped lettuce
Steps
- Cook rice in water until tender; fold in black-eyed peas and keep warm.
- Cook onion in half the oil until soft; add tomatoes, tomato paste, ginger, and half the salt and simmer 8 minutes.
- Hard-boil eggs for 9 minutes, cool, peel, and halve.
- Pan-fry plantain in the remaining oil until golden.
- Divide rice and beans between bowls and add tomato stew, egg, plantain, and lettuce.
