Georgian Chicken Satsivi with Walnut Sauce, finished dish

Ingredients

  • 1 1/2 lb boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 small yellow onion, chopped
  • 2 garlic cloves, chopped
  • 1 1/2 cups walnuts
  • 1 1/2 cups low-sodium chicken broth
  • 1 tsp ground coriander
  • 1/2 tsp ground fenugreek
  • 1/4 tsp ground cinnamon
  • 1 tbsp red wine vinegar
  • 2 tbsp chopped cilantro
  • Kosher salt and black pepper

Steps

  1. Heat the oven to 400°F and season the chicken with salt and pepper.
  2. Sear the chicken in oil in an oven-safe skillet for 3 minutes per side, then roast until it reaches 165°F, about 15 minutes.
  3. Cook the onion and garlic in the skillet until soft.
  4. Blend walnuts, broth, coriander, fenugreek, cinnamon, vinegar, onion and garlic until smooth.
  5. Warm the sauce gently without boiling, adjust the seasoning, then spoon it over sliced chicken and finish with cilantro.
