Gabonese Fish in Tomato Peanut Sauce with rice and greens

Ingredients

  • 10 oz firm white fish fillets
  • 1 tbsp oil
  • 1 small shallot, minced
  • 1 garlic clove, minced
  • 1 cup crushed tomatoes
  • 1/4 cup unsweetened peanut butter
  • 3/4 cup vegetable broth
  • 1 cup chopped spinach
  • 1/2 tsp ground coriander
  • 1 tbsp lime juice
  • 1/2 tsp kosher salt
  • 1/2 cup cooked rice

Steps

  1. Cook shallot in oil until soft, then add garlic and coriander for 30 seconds.
  2. Stir in tomatoes, peanut butter, broth, and salt until smooth and simmer 5 minutes.
  3. Nestle fish into the sauce, cover, and cook until opaque and 145°F (63°C), 6 to 8 minutes.
  4. Fold in spinach until wilted and finish with lime juice.
  5. Serve the fish and sauce with warm rice.
