Gabonese Fish in Tomato Peanut Sauce

Ingredients
- 10 oz firm white fish fillets
- 1 tbsp oil
- 1 small shallot, minced
- 1 garlic clove, minced
- 1 cup crushed tomatoes
- 1/4 cup unsweetened peanut butter
- 3/4 cup vegetable broth
- 1 cup chopped spinach
- 1/2 tsp ground coriander
- 1 tbsp lime juice
- 1/2 tsp kosher salt
- 1/2 cup cooked rice
Steps
- Cook shallot in oil until soft, then add garlic and coriander for 30 seconds.
- Stir in tomatoes, peanut butter, broth, and salt until smooth and simmer 5 minutes.
- Nestle fish into the sauce, cover, and cook until opaque and 145°F (63°C), 6 to 8 minutes.
- Fold in spinach until wilted and finish with lime juice.
- Serve the fish and sauce with warm rice.
