French Croque Monsieur with Green Salad
Golden ham-and-Gruyere sandwiches with a small mustardy green salad bring bistro comfort to a two-person meal.

Ingredients
- 4 slices sandwich bread
- 4 oz sliced ham
- 3/4 cup grated Gruyere
- 1 tbsp butter
- 1 tbsp flour
- 3/4 cup milk
- 1 tsp Dijon mustard
- 1/4 tsp nutmeg
- 3 cups mixed greens
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and black pepper
Steps
- Heat oven broiler to high and toast bread lightly on one side.
- Melt butter in a small pan, whisk in flour, then gradually add milk and cook until thick.
- Stir mustard, nutmeg, salt and pepper into the sauce.
- Layer ham and half the cheese between bread slices, then spread sauce and remaining cheese on top.
- Broil until the cheese bubbles and the sandwiches are hot through.
- Toss greens with olive oil, lemon, salt and pepper, then serve beside the sandwiches.
