French Croque Monsieur with Green Salad

Golden ham-and-Gruyere sandwiches with a small mustardy green salad bring bistro comfort to a two-person meal.

Croque monsieur sandwiches with melted Gruyere and green salad

Ingredients

  • 4 slices sandwich bread
  • 4 oz sliced ham
  • 3/4 cup grated Gruyere
  • 1 tbsp butter
  • 1 tbsp flour
  • 3/4 cup milk
  • 1 tsp Dijon mustard
  • 1/4 tsp nutmeg
  • 3 cups mixed greens
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and black pepper

Steps

  1. Heat oven broiler to high and toast bread lightly on one side.
  2. Melt butter in a small pan, whisk in flour, then gradually add milk and cook until thick.
  3. Stir mustard, nutmeg, salt and pepper into the sauce.
  4. Layer ham and half the cheese between bread slices, then spread sauce and remaining cheese on top.
  5. Broil until the cheese bubbles and the sandwiches are hot through.
  6. Toss greens with olive oil, lemon, salt and pepper, then serve beside the sandwiches.
