Filipino Pancit Bihon with Chicken and Vegetables, finished dish

Ingredients

  • 8 oz rice vermicelli
  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 tbsp neutral oil
  • 1 small onion, sliced
  • 3 garlic cloves, minced
  • 2 carrots, cut into matchsticks
  • 3 cups shredded cabbage
  • 1 cup snow peas
  • 2 cups low-sodium chicken broth
  • 3 tbsp soy sauce
  • 2 scallions, sliced
  • 1 lime, cut into wedges
  • Black pepper

Steps

  1. Soak rice vermicelli in warm water until pliable, then drain.
  2. Cook chicken in 1 tablespoon oil over medium-high heat until it reaches 165°F; transfer to a plate.
  3. Cook onion, garlic, carrots, cabbage and snow peas in remaining oil until crisp-tender.
  4. Add broth, soy sauce and noodles and toss until noodles absorb the liquid and become tender.
  5. Return chicken, add black pepper and scallions and serve with lime wedges.
