Danish Frikadeller with Cucumber Salad
Tender Danish-style meat patties pair with dill potatoes and quick-pickled cucumber for a bright plate.

Ingredients
- 1 lb ground pork
- 1/2 lb ground beef
- 1 small onion, grated
- 1 egg
- 1/3 cup breadcrumbs
- 1/3 cup milk
- 1 tsp kosher salt
- 1/2 tsp ground allspice
- 2 tbsp butter or oil
- 1 lb baby potatoes
- 1 English cucumber, thinly sliced
- 2 tbsp white vinegar
- 1 tsp sugar
- 2 tbsp chopped dill
Steps
- Mix pork, beef, onion, egg, breadcrumbs, milk, salt and allspice until just combined; rest 10 minutes.
- Boil potatoes in salted water until tender, then toss with half the dill and a little butter if desired.
- Toss cucumber with vinegar, sugar, a pinch of salt and remaining dill; set aside to pickle.
- Form meat mixture into 12 oval patties. Pan-fry in butter over medium heat until deeply browned on both sides.
- Lower heat and cook until the centers of the patties reach 160°F, 5 to 7 minutes more.
- Serve frikadeller with dill potatoes and cucumber salad.
