Danish Frikadeller with Cucumber Salad, finished dish

Ingredients

  • 1 lb ground pork
  • 1/2 lb ground beef
  • 1 small onion, grated
  • 1 egg
  • 1/3 cup breadcrumbs
  • 1/3 cup milk
  • 1 tsp kosher salt
  • 1/2 tsp ground allspice
  • 2 tbsp butter or oil
  • 1 lb baby potatoes
  • 1 English cucumber, thinly sliced
  • 2 tbsp white vinegar
  • 1 tsp sugar
  • 2 tbsp chopped dill

Steps

  1. Mix pork, beef, onion, egg, breadcrumbs, milk, salt and allspice until just combined; rest 10 minutes.
  2. Boil potatoes in salted water until tender, then toss with half the dill and a little butter if desired.
  3. Toss cucumber with vinegar, sugar, a pinch of salt and remaining dill; set aside to pickle.
  4. Form meat mixture into 12 oval patties. Pan-fry in butter over medium heat until deeply browned on both sides.
  5. Lower heat and cook until the centers of the patties reach 160°F, 5 to 7 minutes more.
  6. Serve frikadeller with dill potatoes and cucumber salad.
