Chinese Beef Chow Fun with Bean Sprouts
Wide rice noodles get a quick wok-style toss with tender beef, sprouts, scallions, and dark soy.

Ingredients
- 8 ounces fresh wide rice noodles
- 8 ounces flank steak, thinly sliced
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1 tablespoon neutral oil
- 1 small onion, thinly sliced
- 1 cup bean sprouts
- 3 scallions, cut into 2-inch lengths
- 1 tablespoon dark soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
Steps
- Toss the beef with 1 teaspoon soy sauce and the cornstarch. Separate the rice noodles gently with your hands.
- Heat a large skillet or wok until very hot. Add half the oil and sear the beef for 1 to 2 minutes until browned; transfer to a plate.
- Add the remaining oil and cook the onion for 2 minutes. Add the noodles and let them sit briefly to develop a light sear.
- Drizzle in dark soy, oyster sauce, sugar, and white pepper. Toss carefully until the noodles are evenly seasoned.
- Return the beef with sprouts and scallions. Toss for 1 minute until the sprouts soften, then serve hot.
