Cameroonian Ndole Chicken with peanuts and rice

Ingredients

  • 2 boneless skinless chicken thighs, cut into pieces
  • 1 tbsp oil
  • 1 small onion, sliced
  • 1 garlic clove, minced
  • 1 tsp grated ginger
  • 2 cups chopped spinach
  • 1/3 cup unsweetened peanut butter
  • 1 cup chicken broth
  • 2 tbsp roasted peanuts
  • 1/2 tsp cayenne pepper
  • 1/2 tsp kosher salt
  • 1/2 cup cooked rice

Steps

  1. Brown chicken in oil in a skillet until lightly colored.
  2. Add onion, garlic, ginger, cayenne, and salt; cook 2 minutes.
  3. Whisk peanut butter with broth and add it to the skillet; simmer until chicken reaches 165°F (74°C), about 10 minutes.
  4. Stir in spinach and cook until tender and the sauce coats the chicken.
  5. Serve with rice and scatter roasted peanuts over each bowl.
