Burundian Bean and Plantain Stew with greens

Ingredients

  • 1 tbsp oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 tsp ground cumin
  • 1 cup crushed tomatoes
  • 1 1/2 cups cooked red beans
  • 1 ripe plantain, cut into chunks
  • 1 cup chopped kale
  • 1/2 cup vegetable broth
  • 1/2 tsp kosher salt
  • 1/2 cup cooked rice
  • 1 tbsp lime juice

Steps

  1. Cook onion in oil until soft; add garlic and cumin for 30 seconds.
  2. Stir in tomatoes, beans, broth, and salt and simmer 8 minutes.
  3. Add plantain, cover, and cook until tender but not falling apart, about 8 minutes.
  4. Fold in kale and cook until wilted.
  5. Stir in lime juice and serve over warm rice.
