Bhutanese-Inspired Chile Cheese Stew with Red Rice, finished dish

Ingredients

  • 1 1/2 cups Bhutanese or brown red rice
  • 3 cups water
  • 8 mild green chiles, halved lengthwise
  • 2 tomatoes, sliced
  • 1 small onion, sliced
  • 2 garlic cloves, minced
  • 1 cup water
  • 6 oz farmer cheese or feta, crumbled
  • 4 oz Monterey Jack, shredded
  • 1 tbsp butter
  • 2 scallions, sliced
  • Kosher salt

Steps

  1. Cook red rice in 3 cups water with a pinch of salt until tender, 30 to 35 minutes.
  2. Combine chiles, tomatoes, onion, garlic and 1 cup water in a skillet and simmer until tender, 10 minutes.
  3. Reduce heat to low and add farmer cheese, Monterey Jack and butter.
  4. Stir gently just until the cheese melts into the liquid; do not boil.
  5. Taste for salt, finish with scallions and serve with red rice.
