Bangladeshi Mustard Fish with Turmeric Rice
Flaky fish cooks in a sharp mustard-turmeric sauce and is served with fragrant golden rice.

Ingredients
- 1 1/2 lb firm white fish fillets
- 2 tbsp Dijon mustard
- 1 tbsp whole-grain mustard
- 1 tsp ground turmeric, divided
- 1/2 tsp nigella seeds
- 1 tbsp neutral oil
- 1 small onion, thinly sliced
- 2 green chiles, slit
- 1 cup light coconut milk
- 1 1/2 cups basmati rice
- 2 1/4 cups water
- 1/3 cup chopped cilantro
- Kosher salt
Steps
- Cook rice with water, half the turmeric and 1/2 teaspoon salt; rest covered when tender.
- Season fish with salt and a pinch of turmeric.
- Cook onion and nigella seeds in oil until soft, then add both mustards, remaining turmeric, chiles and coconut milk.
- Nestle in fish, cover and simmer gently until opaque and 145°F, 8 to 10 minutes.
- Adjust salt, finish with cilantro and serve with turmeric rice.
