Bangladeshi Mustard Fish with Turmeric Rice, finished dish

Ingredients

  • 1 1/2 lb firm white fish fillets
  • 2 tbsp Dijon mustard
  • 1 tbsp whole-grain mustard
  • 1 tsp ground turmeric, divided
  • 1/2 tsp nigella seeds
  • 1 tbsp neutral oil
  • 1 small onion, thinly sliced
  • 2 green chiles, slit
  • 1 cup light coconut milk
  • 1 1/2 cups basmati rice
  • 2 1/4 cups water
  • 1/3 cup chopped cilantro
  • Kosher salt

Steps

  1. Cook rice with water, half the turmeric and 1/2 teaspoon salt; rest covered when tender.
  2. Season fish with salt and a pinch of turmeric.
  3. Cook onion and nigella seeds in oil until soft, then add both mustards, remaining turmeric, chiles and coconut milk.
  4. Nestle in fish, cover and simmer gently until opaque and 145°F, 8 to 10 minutes.
  5. Adjust salt, finish with cilantro and serve with turmeric rice.
