Armenian Beef Kofta with Tomato Bulgur

Ingredients
- 1 lb lean ground beef
- 1 small onion, grated and squeezed dry
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 1/4 tsp ground allspice
- 1/4 cup chopped parsley
- 1 cup coarse bulgur
- 1 tbsp tomato paste
- 1 3/4 cups low-sodium beef broth
- 1 diced tomato
- 1 tbsp olive oil
- Kosher salt and black pepper
Steps
- Heat the oven to 425°F and line a sheet pan.
- Mix beef, half the onion, garlic, cumin, paprika, allspice, parsley, salt and pepper; form 12 oval kofta.
- Roast until browned and the centers reach 160°F, 14 to 16 minutes.
- Meanwhile cook the remaining onion in oil, stir in tomato paste and bulgur, then add broth and tomato.
- Cover and simmer the bulgur until tender, about 15 minutes; rest 5 minutes and serve with the kofta.
