Armenian Beef Kofta with Tomato Bulgur, finished dish

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, grated and squeezed dry
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1/4 tsp ground allspice
  • 1/4 cup chopped parsley
  • 1 cup coarse bulgur
  • 1 tbsp tomato paste
  • 1 3/4 cups low-sodium beef broth
  • 1 diced tomato
  • 1 tbsp olive oil
  • Kosher salt and black pepper

Steps

  1. Heat the oven to 425°F and line a sheet pan.
  2. Mix beef, half the onion, garlic, cumin, paprika, allspice, parsley, salt and pepper; form 12 oval kofta.
  3. Roast until browned and the centers reach 160°F, 14 to 16 minutes.
  4. Meanwhile cook the remaining onion in oil, stir in tomato paste and bulgur, then add broth and tomato.
  5. Cover and simmer the bulgur until tender, about 15 minutes; rest 5 minutes and serve with the kofta.
