Argentine Locro Bean and Squash Stew
A small-batch, hearty stew of beef, white beans, squash and corn with warming paprika.

Ingredients
- 8 oz beef stew meat, cut small
- 1 tbsp neutral oil
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- 1 cup cubed butternut squash
- 1 can cannellini beans, drained
- 1/2 cup corn kernels
- 1 1/2 cups beef broth
- 2 tbsp sliced scallion
- Salt and black pepper
Steps
- Season beef and brown it well in oil in a small Dutch oven; set aside.
- Cook onion until soft, then add garlic and paprika for 30 seconds.
- Add squash, beans, corn, broth and browned beef. Bring to a gentle simmer.
- Cover and cook until the beef is tender and the squash thickens the broth, 35 to 40 minutes; add a splash of water if needed.
- Taste for salt and pepper, scatter with scallion, and serve hot.
