Argentine Locro Bean and Squash Stew, finished dish

Ingredients

  • 8 oz beef stew meat, cut small
  • 1 tbsp neutral oil
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 cup cubed butternut squash
  • 1 can cannellini beans, drained
  • 1/2 cup corn kernels
  • 1 1/2 cups beef broth
  • 2 tbsp sliced scallion
  • Salt and black pepper

Steps

  1. Season beef and brown it well in oil in a small Dutch oven; set aside.
  2. Cook onion until soft, then add garlic and paprika for 30 seconds.
  3. Add squash, beans, corn, broth and browned beef. Bring to a gentle simmer.
  4. Cover and cook until the beef is tender and the squash thickens the broth, 35 to 40 minutes; add a splash of water if needed.
  5. Taste for salt and pepper, scatter with scallion, and serve hot.
