Angolan-Inspired Moamba Chicken with Rice

Ingredients
- 1 1/2 pounds bone-in chicken thighs and drumsticks
- 1 teaspoon kosher salt, divided
- 2 tablespoons red palm oil or vegetable oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon smoked paprika
- 1 can (14 ounces) crushed tomatoes
- 1 1/2 cups low-sodium chicken broth
- 1 cup sliced okra
- 3 cups baby spinach
- 1 tablespoon lemon juice
- Cooked rice, for serving
Steps
- Season chicken with 1/2 teaspoon salt. Heat the oil in a Dutch oven and brown chicken for 4 minutes per side; transfer to a plate.
- Cook onion for 5 minutes, then add garlic, ginger, and paprika for 30 seconds.
- Add tomatoes, broth, and remaining salt. Return chicken, cover, and simmer for 22 to 25 minutes until it reaches 165°F (74°C).
- Add okra and simmer uncovered for 6 minutes until tender and the sauce slightly thickens.
- Stir in spinach and lemon juice just until the spinach wilts.
- Serve the chicken and sauce over rice.
