Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1 cup carrots, chopped
  • 1 can crushed tomatoes
  • 4 eggs
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped
  • Salt and black pepper, to taste

Steps

  1. Heat the olive oil in a skillet. Cook the onion, garlic, ground turmeric, and carrots until soft.
  2. Stir the crushed tomatoes into the vegetables and simmer the tomato sauce until thickened.
