Ingredients

  • 6 ounces rice noodles
  • 1 tablespoon olive oil
  • 10 ounces shrimp, peeled and deveined
  • 2 garlic cloves, minced
  • 1 teaspoon ground caraway
  • 1 cup cabbage, chopped
  • 1 tablespoon fish sauce
  • 1 tablespoon apple cider vinegar
  • 1/4 cup parsley, chopped
  • Salt and black pepper, to taste

Steps

  1. Soak or boil the rice noodles according to the package directions, then drain the rice noodles.
  2. Heat the olive oil in a skillet. Cook the shrimp until opaque, then transfer the shrimp to a plate.
  3. Cook the garlic, ground caraway, and cabbage in the skillet until fragrant and crisp-tender.
  4. Add the rice noodles, fish sauce, and apple cider vinegar; toss until the noodles are coated and hot.
  5. Return the shrimp to the noodles, add the parsley, and season with salt and black pepper before serving.
