Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 cup green beans, chopped
  • 1 can crushed tomatoes
  • 4 eggs
  • 1 tablespoon red wine vinegar
  • 1/4 cup parsley, chopped
  • Salt and black pepper, to taste

Steps

  1. Heat the olive oil in a skillet. Cook the onion, garlic, dried oregano, and green beans until soft.
  2. Stir the crushed tomatoes into the vegetables and simmer the tomato sauce until thickened.
  3. Make four wells in the tomato sauce and crack the eggs into the wells.
  4. Cover the skillet and cook until the eggs are set to your liking.
  5. Finish the eggs with red wine vinegar, parsley, salt, and black pepper, then serve hot.
