Ingredients

  • 12 ounces potatoes, peeled and diced
  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt
  • 1 tablespoon olive oil
  • 1 teaspoon ground sumac
  • 1/4 cup mint, chopped
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste

Steps

  1. Boil the potatoes until tender, then mash the potatoes with salt and black pepper.
  2. Mix the potatoes with flour, yogurt, olive oil, ground sumac, and mint to make a soft flatbread dough.
  3. Divide the flatbread dough into rounds and press the feta cheese into the center of each round.
  4. Cook the potato flatbreads in a dry skillet until the flatbreads are golden on both sides.
  5. Drizzle the potato flatbreads with lemon juice, then serve the flatbreads hot.
