- 1 tablespoon olive oil
- 12 ounces boneless skinless chicken thighs, cut into bite-size pieces
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ground caraway
- 1 cup long-grain rice, rinsed
- 1 3/4 cups low-sodium chicken broth
- 1 cup cabbage, chopped
- 1 tablespoon apple cider vinegar
- 1/4 cup parsley, chopped

Steps
- Heat the olive oil in a deep skillet over medium-high heat. Brown the chicken, then transfer the chicken to a plate.
