Ingredients

  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 6 ounces ramen noodles
  • 8 ounces extra-firm tofu, cubed
  • 1 cup bell pepper, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1/4 cup parsley, chopped
  • Salt and black pepper, to taste

Steps

  1. Heat the olive oil in a soup pot. Cook the garlic and smoked paprika until fragrant.
