Ingredients

  • 8 ounces pasta
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 can crushed tomatoes
  • 1 cup zucchini, chopped
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper, to taste

Steps

  1. Boil the pasta in salted water until tender, then reserve 1/2 cup pasta water and drain the pasta.
  2. Heat the olive oil in a skillet. Cook the onion, garlic, and ground cumin until fragrant.
  3. Add the crushed tomatoes and zucchini. Simmer the tomato sauce until the vegetables are tender.
  4. Toss the pasta with the tomato sauce, reserved pasta water, and lime juice.
  5. Stir in the cilantro and parmesan cheese. Season with salt and black pepper, then serve hot.
