Ingredients

  • 8 ounces pasta
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground ginger
  • 1 can crushed tomatoes
  • 1 cup snow peas, chopped
  • 1 tablespoon rice vinegar
  • 1/4 cup scallions, chopped
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper, to taste

Steps

  1. Boil the pasta in salted water until tender, then reserve 1/2 cup pasta water and drain the pasta.
  2. Heat the olive oil in a skillet. Cook the onion, garlic, and ground ginger until fragrant.
  3. Add the crushed tomatoes and snow peas. Simmer the tomato sauce until the vegetables are tender.
  4. Toss the pasta with the tomato sauce, reserved pasta water, and rice vinegar.
  5. Stir in the scallions and parmesan cheese. Season with salt and black pepper, then serve hot.
