- 12 ounces lamb shoulder, cut into small pieces
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 cup basmati rice, rinsed
- 1 3/4 cups low-sodium lamb broth
- 1 cup zucchini, chopped
- 1 tablespoon lime juice
- 1/4 cup cilantro, chopped

Steps
- Heat the olive oil in a deep skillet. Brown the lamb shoulder, then transfer the lamb shoulder to a plate.
- Cook the onion, garlic, and ground cumin in the skillet until fragrant.

- Return the lamb shoulder to the rice with the zucchini. Cover and cook until the lamb is tender.
- Fold in the lime juice and cilantro. Season with salt and black pepper, then serve the pilaf hot.
