Ingredients
- 8 ounces pasta
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ground ginger
- 1 can crushed tomatoes
- 1 cup snow peas, chopped
- 1 tablespoon rice vinegar
- 1/4 cup scallions, chopped
- 1/4 cup grated parmesan cheese
- Salt and black pepper, to taste
Steps
- Boil the pasta in salted water until tender, then reserve 1/2 cup pasta water and drain the pasta.
- Heat the olive oil in a skillet. Cook the onion, garlic, and ground ginger until fragrant.
- Add the crushed tomatoes and snow peas. Simmer the tomato sauce until the vegetables are tender.
- Toss the pasta with the tomato sauce, reserved pasta water, and rice vinegar.
- Stir in the scallions and parmesan cheese. Season with salt and black pepper, then serve hot.
