Ingredients
- 1 cup brown rice, rinsed
- 1 3/4 cups low-sodium beef broth
- 1 tablespoon olive oil
- 10 ounces beef sirloin, thinly sliced
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ground ginger
- 1 cup snow peas, chopped
- 1 tablespoon rice vinegar
- 1/4 cup scallions, chopped

Steps
- Simmer the brown rice in beef broth until the brown rice is tender.
- Heat the olive oil in a skillet. Sear the beef sirloin, then transfer the beef sirloin to a plate.
- Cook the onion, garlic, ground ginger, and snow peas in the skillet until tender.
- Return the beef sirloin to the vegetables and finish with rice vinegar.
- Spoon the beef and vegetables over the brown rice. Add the scallions, salt, and black pepper, then serve hot.
