Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cinnamon
  • 1 cup eggplant, chopped
  • 1 can crushed tomatoes
  • 4 eggs
  • 1 tablespoon lemon juice
  • 1/4 cup mint, chopped
  • Salt and black pepper, to taste

Steps

  1. Heat the olive oil in a skillet. Cook the onion, garlic, ground cinnamon, and eggplant until soft.
  2. Stir the crushed tomatoes into the vegetables and simmer the tomato sauce until thickened.
  3. Make four wells in the tomato sauce and crack the eggs into the wells.
  4. Cover the skillet and cook until the eggs are set to your liking.
  5. Finish the eggs with lemon juice, mint, salt, and black pepper, then serve hot.
