- 6 ounces rice noodles
- 1 tablespoon olive oil
- 10 ounces shrimp, peeled and deveined

- 1 cup cherry tomatoes, chopped
- 1 tablespoon fish sauce
- 1 tablespoon lemon juice
- 1/4 cup mint, chopped

Steps
- Soak or boil the rice noodles according to the package directions, then drain the rice noodles.
- Heat the olive oil in a skillet. Cook the shrimp until opaque, then transfer the shrimp to a plate.
- Cook the garlic, ground sumac, and cherry tomatoes in the skillet until fragrant and crisp-tender.
- Add the rice noodles, fish sauce, and lemon juice; toss until the noodles are coated and hot.
- Return the shrimp to the noodles, add the mint, and season with salt and black pepper before serving.
