Venezuelan Arepas Reina Pepiada-Inspired Chicken Salad
Crisp corn arepas are stuffed with a creamy avocado chicken salad inspired by the beloved Venezuelan filling.

Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 cups precooked white corn meal
- 2 1/2 cups warm water
- 1 tsp kosher salt, divided
- 1 tbsp vegetable oil
- 1 ripe avocado, mashed
- 1/3 cup mayonnaise
- 1 celery stalk, finely diced
- 2 scallions, thinly sliced
- 2 tbsp lime juice
- 2 tbsp chopped cilantro
- Black pepper and lettuce leaves
Steps
- Poach chicken in gently simmering water until the thickest part reaches 165°F. Rest, then shred finely.
- Mix corn meal, warm water and 1/2 teaspoon salt. Rest 5 minutes, then shape into eight thick disks.
- Cook arepas in oil over medium heat until golden on both sides, about 6 minutes per side. Transfer to a 375°F oven for 8 minutes to finish.
- Mix avocado, mayonnaise, celery, scallions, lime juice, cilantro, remaining salt and pepper. Fold in shredded chicken.
- Split arepas almost through, tuck in lettuce, and fill generously with chicken salad.
