Surinamese Peanut Chicken with Green Beans and Rice

Ingredients
- 1 1/2 lb boneless, skinless chicken thighs, cut into pieces
- 1 tbsp vegetable oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 1/2 cup natural peanut butter
- 1 1/2 cups low-sodium chicken broth
- 1 tbsp soy sauce
- 12 oz green beans, trimmed
- 1 lime
- 3 cups cooked rice
- 2 scallions, sliced
- Kosher salt
Steps
- Season chicken lightly and brown it in oil in a deep skillet.
- Add onion, garlic and ginger and cook until fragrant.
- Whisk peanut butter, broth and soy sauce and pour into the skillet.
- Cover and simmer 12 minutes, add green beans, then cook uncovered until beans are tender and chicken reaches 165°F, 7 minutes.
- Add lime juice and serve over rice with scallions.
