Somali Bariis Iskukaris Chicken with Raisins

Ingredients
- 2 boneless skinless chicken thighs
- 1 tbsp oil
- 1 small onion, thinly sliced
- 1 garlic clove, minced
- 1/2 tsp ground cumin
- 1/4 tsp ground cardamom
- 1/4 tsp ground cinnamon
- 3/4 cup basmati rice, rinsed
- 1 1/2 cups chicken broth
- 2 tbsp raisins
- 2 tbsp chopped parsley
- 1/2 tsp kosher salt
Steps
- Season chicken with salt and brown it in oil in a small Dutch oven for 3 minutes per side; transfer to a plate.
- Cook onion until deeply golden, then add garlic, cumin, cardamom, and cinnamon.
- Stir in rice, broth, raisins, and the remaining salt; nestle chicken on top.
- Cover and cook on low until rice is tender and chicken reaches 165°F (74°C), about 18 minutes.
- Rest covered 5 minutes, fluff the rice, and finish with parsley.
