Somali Bariis Iskukaris Chicken with raisins and herbs

Ingredients

  • 2 boneless skinless chicken thighs
  • 1 tbsp oil
  • 1 small onion, thinly sliced
  • 1 garlic clove, minced
  • 1/2 tsp ground cumin
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cinnamon
  • 3/4 cup basmati rice, rinsed
  • 1 1/2 cups chicken broth
  • 2 tbsp raisins
  • 2 tbsp chopped parsley
  • 1/2 tsp kosher salt

Steps

  1. Season chicken with salt and brown it in oil in a small Dutch oven for 3 minutes per side; transfer to a plate.
  2. Cook onion until deeply golden, then add garlic, cumin, cardamom, and cinnamon.
  3. Stir in rice, broth, raisins, and the remaining salt; nestle chicken on top.
  4. Cover and cook on low until rice is tender and chicken reaches 165°F (74°C), about 18 minutes.
  5. Rest covered 5 minutes, fluff the rice, and finish with parsley.
