Paraguayan Bori Bori Chicken Soup, finished dish

Ingredients

  • 2 chicken thighs
  • 1 tbsp oil
  • 1/2 onion, diced
  • 1 carrot, sliced
  • 1 cup chicken broth
  • 1 cup water
  • 1/2 ear corn, cut into rounds
  • 1/2 cup cornmeal
  • 1/4 cup grated Parmesan
  • 1 egg yolk
  • 2 tbsp chopped parsley
  • Salt and black pepper

Steps

  1. Brown chicken in oil in a saucepan, then add onion and carrot and cook for 3 minutes.
  2. Add broth, water and corn. Simmer until chicken is tender and cooked through, about 20 minutes; shred the meat and return it to the soup.
  3. Mix cornmeal, Parmesan, egg yolk, a pinch of salt and enough warm water to form a soft dough.
  4. Roll dough into small dumplings and drop them into the gently simmering soup; cook 8 to 10 minutes.
  5. Season, stir in parsley, and serve the soup hot.
