Paraguayan Bori Bori Chicken Soup
Golden chicken soup with tender cornmeal-cheese dumplings is scaled for a soothing weeknight dinner.

Ingredients
- 2 chicken thighs
- 1 tbsp oil
- 1/2 onion, diced
- 1 carrot, sliced
- 1 cup chicken broth
- 1 cup water
- 1/2 ear corn, cut into rounds
- 1/2 cup cornmeal
- 1/4 cup grated Parmesan
- 1 egg yolk
- 2 tbsp chopped parsley
- Salt and black pepper
Steps
- Brown chicken in oil in a saucepan, then add onion and carrot and cook for 3 minutes.
- Add broth, water and corn. Simmer until chicken is tender and cooked through, about 20 minutes; shred the meat and return it to the soup.
- Mix cornmeal, Parmesan, egg yolk, a pinch of salt and enough warm water to form a soft dough.
- Roll dough into small dumplings and drop them into the gently simmering soup; cook 8 to 10 minutes.
- Season, stir in parsley, and serve the soup hot.
