Nigerian Jollof Rice with Spiced Chicken

Ingredients
- 1 1/2 lb bone-in chicken thighs
- 2 tbsp vegetable oil
- 1 red bell pepper, chopped
- 1 can diced tomatoes
- 1 onion, divided
- 2 garlic cloves
- 1 tsp grated ginger
- 1 tsp dried thyme
- 1 tsp curry powder
- 1 1/2 cups parboiled long-grain rice
- 2 1/2 cups low-sodium chicken broth
- 1 bay leaf
- Kosher salt and black pepper
Steps
- Heat the oven to 400°F; season chicken with half the thyme, curry powder, salt and pepper.
- Brown chicken in oil in a Dutch oven, then transfer to a plate.
- Blend bell pepper, tomatoes, half the onion, garlic and ginger; cook the puree with remaining onion until reduced, 12 minutes.
- Stir in rice, broth, remaining spices and bay leaf; nestle chicken on top.
- Cover and bake until rice is tender and chicken reaches 165°F, 30 to 35 minutes; rest 10 minutes.
