Nigerian Jollof Rice with Spiced Chicken, finished dish

Ingredients

  • 1 1/2 lb bone-in chicken thighs
  • 2 tbsp vegetable oil
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes
  • 1 onion, divided
  • 2 garlic cloves
  • 1 tsp grated ginger
  • 1 tsp dried thyme
  • 1 tsp curry powder
  • 1 1/2 cups parboiled long-grain rice
  • 2 1/2 cups low-sodium chicken broth
  • 1 bay leaf
  • Kosher salt and black pepper

Steps

  1. Heat the oven to 400°F; season chicken with half the thyme, curry powder, salt and pepper.
  2. Brown chicken in oil in a Dutch oven, then transfer to a plate.
  3. Blend bell pepper, tomatoes, half the onion, garlic and ginger; cook the puree with remaining onion until reduced, 12 minutes.
  4. Stir in rice, broth, remaining spices and bay leaf; nestle chicken on top.
  5. Cover and bake until rice is tender and chicken reaches 165°F, 30 to 35 minutes; rest 10 minutes.
