Filipino Pancit Bihon with Chicken and Vegetables
Thin rice noodles, chicken and crisp vegetables make a bright citrus-finished Filipino-style stir-fry.

Ingredients
- 8 oz rice vermicelli
- 1 lb boneless, skinless chicken breast, thinly sliced
- 2 tbsp neutral oil
- 1 small onion, sliced
- 3 garlic cloves, minced
- 2 carrots, cut into matchsticks
- 3 cups shredded cabbage
- 1 cup snow peas
- 2 cups low-sodium chicken broth
- 3 tbsp soy sauce
- 2 scallions, sliced
- 1 lime, cut into wedges
- Black pepper
Steps
- Soak rice vermicelli in warm water until pliable, then drain.
- Cook chicken in 1 tablespoon oil over medium-high heat until it reaches 165°F; transfer to a plate.
- Cook onion, garlic, carrots, cabbage and snow peas in remaining oil until crisp-tender.
- Add broth, soy sauce and noodles and toss until noodles absorb the liquid and become tender.
- Return chicken, add black pepper and scallions and serve with lime wedges.
