Ecuadorian Seco de Pollo with Rice, finished dish

Ingredients

  • 2 chicken legs or thighs
  • 1 tbsp oil
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup cilantro leaves
  • 1 small tomato, chopped
  • 1/2 cup chicken broth
  • 1 tsp ground cumin
  • 1 cup cooked rice
  • 1 small ripe plantain, sliced
  • 1/2 avocado, diced
  • Salt and black pepper

Steps

  1. Blend cilantro, tomato, broth and cumin until mostly smooth.
  2. Brown chicken in oil in a covered skillet, then set it aside.
  3. Cook onion and garlic in the skillet until softened, then pour in the cilantro mixture.
  4. Return chicken, cover, and simmer until tender and cooked through, 25 to 30 minutes, then season with salt and black pepper.
  5. Pan-fry plantain until caramelized and serve the chicken with rice, plantain and avocado.
