Czech Smazeny Syr with Potato Wedges

Breaded fried cheese with potato wedges and cabbage salad

Ingredients

  • 2 slices firm cheese such as Edam, 4 oz total
  • 1/3 cup flour
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • 10 oz potatoes, wedged
  • 1 tbsp olive oil
  • 1 cup shredded cabbage
  • 1 tbsp plain yogurt
  • 1 tsp Dijon mustard
  • 1 tsp cider vinegar
  • Salt and black pepper

Steps

  1. Heat oven to 425F and roast potato wedges with oil, salt and pepper until crisp.
  2. Set up flour, egg and breadcrumb bowls; coat cheese in flour, egg, then breadcrumbs twice for a secure crust.
  3. Chill breaded cheese 10 minutes while potatoes finish.
  4. Pan-fry cheese in a shallow layer of oil until deeply golden and hot through, turning carefully.
  5. Mix cabbage with yogurt, Dijon, vinegar, salt and pepper.
  6. Serve cheese immediately with potato wedges and cabbage salad.
