Bhutanese-Inspired Chile Cheese Stew with Red Rice
Tender green chiles and tomatoes melt into a simple cheese sauce served with earthy red rice.

Ingredients
- 1 1/2 cups Bhutanese or brown red rice
- 3 cups water
- 8 mild green chiles, halved lengthwise
- 2 tomatoes, sliced
- 1 small onion, sliced
- 2 garlic cloves, minced
- 1 cup water
- 6 oz farmer cheese or feta, crumbled
- 4 oz Monterey Jack, shredded
- 1 tbsp butter
- 2 scallions, sliced
- Kosher salt
Steps
- Cook red rice in 3 cups water with a pinch of salt until tender, 30 to 35 minutes.
- Combine chiles, tomatoes, onion, garlic and 1 cup water in a skillet and simmer until tender, 10 minutes.
- Reduce heat to low and add farmer cheese, Monterey Jack and butter.
- Stir gently just until the cheese melts into the liquid; do not boil.
- Taste for salt, finish with scallions and serve with red rice.
