Cameroonian Ndolé Chicken with Peanuts

Ingredients
- 2 boneless skinless chicken thighs, cut into pieces
- 1 tbsp oil
- 1 small onion, sliced
- 1 garlic clove, minced
- 1 tsp grated ginger
- 2 cups chopped spinach
- 1/3 cup unsweetened peanut butter
- 1 cup chicken broth
- 2 tbsp roasted peanuts
- 1/2 tsp cayenne pepper
- 1/2 tsp kosher salt
- 1/2 cup cooked rice
Steps
- Brown chicken in oil in a skillet until lightly colored.
- Add onion, garlic, ginger, cayenne, and salt; cook 2 minutes.
- Whisk peanut butter with broth and add it to the skillet; simmer until chicken reaches 165°F (74°C), about 10 minutes.
- Stir in spinach and cook until tender and the sauce coats the chicken.
- Serve with rice and scatter roasted peanuts over each bowl.
