Zimbabwean Peanut Greens with Sadza
Tender greens in a savory peanut sauce pair with smooth maize porridge for a satisfying plant-based meal.

Ingredients
- 1 large bunch collard greens, stems removed and leaves sliced
- 1 tbsp vegetable oil
- 1 onion, diced
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- 1/2 cup natural peanut butter
- 1 1/2 cups vegetable broth
- 1 cup quick-cooking maize meal
- 4 cups water
- 1/4 tsp cayenne
- Kosher salt
Steps
- Cook onion in oil until soft, then add garlic and tomatoes and cook 5 minutes.
- Whisk peanut butter with broth and add it to the pan.
- Add collard greens, cover and simmer until tender, 12 to 15 minutes; season with cayenne and salt.
- Bring water and 1 teaspoon salt to a simmer, whisk in maize meal and cook until thick and smooth according to package directions.
- Serve the peanut greens beside warm sadza.
