Zambian Ifisashi Greens with Peanut Nshima

Ingredients

  • 1 tbsp oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 4 cups chopped spinach
  • 1/4 cup unsweetened peanut butter
  • 3/4 cup vegetable broth
  • 1 small tomato, diced
  • 1/2 tsp kosher salt
  • 1/2 cup fine cornmeal
  • 1 1/2 cups water
  • 1 tsp lemon juice
  • 1/4 tsp ground black pepper

Steps

  1. Cook onion in oil until soft; add garlic for 30 seconds.
  2. Add spinach, tomato, broth, salt, and pepper and cook until the greens collapse.
  3. Whisk peanut butter with a little hot broth, then stir it into the greens and simmer until creamy.
  4. Bring water to a boil in a second saucepan and whisk in cornmeal; stir until a smooth thick porridge forms.
  5. Finish greens with lemon juice and serve alongside nshima.
