Tajik Qurutob-Inspired Tomato Bread Salad, finished dish

Ingredients

  • 4 large flatbreads or pitas
  • 1 1/2 cups plain Greek yogurt
  • 1/3 cup warm water
  • 1 garlic clove, finely grated
  • 2 tbsp olive oil
  • 1 small red onion, thinly sliced
  • 3 tomatoes, diced
  • 1 English cucumber, diced
  • 1 cup chopped cilantro, dill and parsley
  • 1 tsp ground coriander
  • Kosher salt and black pepper

Steps

  1. Warm flatbreads in a dry skillet until flexible, then tear them into bite-size pieces and arrange in a broad serving bowl.
  2. Whisk yogurt, warm water, garlic, 1 tablespoon olive oil, coriander, salt and pepper until pourable.
  3. Pour half the yogurt mixture over the bread and let it soften for 3 minutes.
  4. Toss onion, tomatoes, cucumber and herbs with remaining oil, salt and pepper.
  5. Spoon vegetables over the softened bread and drizzle with remaining yogurt sauce.
  6. Serve right away while the bread retains some texture.
